A Buffalo wing is a chicken wing separated into drumette and flat, deep fried without breading, then tossed in a sauce built from cayenne pepper hot sauce and butter. It originated in the city of Buffalo and is conventionally served with celery sticks and blue cheese dressing. One festival in this directory is named for the dish and holds its dates on the last weekend of August.
