A Buffalo wing is a chicken wing separated into drumette and flat, deep fried without breading, then tossed in a sauce built from cayenne pepper hot sauce and butter. It originated in the city of Buffalo and is conventionally served with celery sticks and blue cheese dressing. The National Buffalo Wing Festival is named for the dish and was listed for August 29 to 30, though that date was unconfirmed.
